Trio of Ice Cream Sandwiches served on three types of cookies with fresh mint and strawberry garnish. As seen in the 2006 Summer Issue of 'Homefront Magazine'.

Yield: 6 servings 12 1oz oatmeal raisin cookies 12 1oz chocolate chip cookies 12 1oz dark chocolate reverse cookies 18 scoops vanilla (or your favourite flavour) ice cream 2 bunches of mint 2 pints of strawberries

1. Bake or purchase cookies. 2. Prepare scoops of ice cream, keep in freezer until serving. 3. Assemble sandwiches, place ice cream on cookie, place another cookie on top to form a sandwich. Press together to flatten slightly. 4. Garnish plate with mint sprigs and fresh strawberries.
