Pumpkin-Fig-Sage Stuffing
Our unique recipe for this exotic stuffing will make you wonder why you've been eating plain old bread-crumbs all these years.

Yield: 8 to 10 cups (enough to stuff one 10 to 15lb turkey)
1 Batard French loaf, diced into 1” cubes.
10oz pumpkin puree
1 cup pepitas (green shelled pumpkin seeds)
½ cup brandy
1 cup shallots, sliced
1 tsp nutmeg
1 tbsp kosher salt
1 tsp fresh ground black pepper
2 whole eggs, beaten slightly
Dice the Bread into cubes. Mix all ingredients together in large bowl. Stuff into cavity of turkey. Roast turkey until stuffing is hot (170f)
