Oven Roasted Beet Salad with Blood Oranges and Chevre (CD1)



This fresh salad is the perfect accompaniment to any entree, as it pairs vibrant colour with intense flavour, adding a creative flare to any meal. An exciting burst of colour for a Valentines dinner! 





Salad

Any Season




8 medium sized beets, peeled
3 blood oranges, peeled, sectioned, membranes removed
4 oz of chevre
3 sprigs of fresh chives, cut 
1/4 cup aged balsamic 



1. Preheat oven to 425
2. Wrap 2 or 3 beets together in aluminum foil, place on a cookie sheet. Repeat with remianing beets
3. Roast beets for about 45 minutes, until tender
4. Cool and remove from foil
5. Cut beets into quarters or eighths, depending on preference
6. Section blood oranges and remove membranes



On a large platter, combine oranges and beets. Sprinkle chevre on top of salad. Sprinkle cut chives over top of salad. Drizzle balsamic before serving.
Serve room temperature or slightly chilled.
