Decadent Cheesecake with Fresh Strawberries and Raspberries (cd2)
An easy and delicious favorite that combines a velvety rich filling with fresh berries. A wonderful way to end a Valentines meal!
Dessert
Any Season
1/2 cup butter
1 1/2 cups graham cracker crumbs
3 tbsp sugar
2 8oz packages of cream cheese, brought to room temperature
2 tbsp flour
1 1/4 cups sugar
1/2 cup sour cream
1 tbsp vanilla
3 eggs, room temperature
1 box of strawberries, washed and stemmed
1 pint of raspberries, washed
1. Preheat oven to 300
2. Mix crumbs, butter and sugar in a bowl
3. Press crumb mixture into the bottom of an ungreased springform pan
In a separate bowl,
1. Mix cream cheese and flour well
2. Add sugar, sour cream and vanilla
3. Combine until very smooth
4. Add eggs, one at a time, while continuing to mix
5. Pour batter over crust
6. Bake for roughly 50 minutes or until center is only slightly loose
7. Refridgerate at least 5 hours and remove from springform
Slice strawberries and place in concentric circles around the outside of the cake. Place raspberries in the centre of the cake. Serve chilled.
