Soup Shooters -

Appetizer

Any Season




1 – Tomato Lemongrass

Ingredients

2 tbsp. olive oil
2 cup tomato juice
1 stalk lemongrass, split
2 kaffir lime leaves, whole
salt and pepper to taste
zest of 1 lemon
½ tsp olive oil

2- Beet Balsamic

3 large beets, raw grated
1 cup tomato juice
¼ cup balsamic vinegar
1 tbsp. honey
salt and pepper to taste

3 – Roasted Red Pepper

1 jar roasted red peppers, strained
½ tsp. smoked paprika
1 cup tomato juice
1 clove garlic
2 tbsp. olive oil
pinch of sugar

1 bunch chive
1 cup olive oil





1 – Tomato Lemongrass

Method

1.    simmer tomato juice, lemongrass and lime leaves for 20 minutes
2.    let cool and strain
3.    garnish with a couple drops of oil and a pinch of lemon zest

2- Beet Balsamic

Method

1.    peel raw beets and grate into a nonreactive bowl
2.    place grated beets onto  a large sheet of cheesecloth, form into a ball and squeeze out juice into a separate bowl
3.    combine beet juice with tomato juice and season to taste
4.    blend honey with balsamic and drizzle into shot glass enough to cover bottom
5.    add soup

3 – Roasted Red Pepper

Method

1. Puree all ingredients in a blender until smooth, then strain through a fine sieve
season to taste

Puree chives and oil in a blender on high
let stand for 1 hour, then strain and refrigerate
