Werewolf Dinner -
Mustard crusted rack of lamb over ancient grains salad

Ingredients - Ancient grains salad

3 cup wild rice, cooked
1 cup couscous, cooked
½ cup dried cranberries
¼ cup dried apricots, chopped
¼ cup candied dates, chopped
2 stalk green onion, sliced
¼ flatleaf parsley chopped
2 tbsp. canola oil
2 tbsp. rice wine vinegar

Ingredients - Lamb

2 rack of lamb, frenched
salt and pepper
2 tbsp. olive oil
3 tbsp. grainy Dijon mustard




Method - Ancient grains salad

1. Blend all ingredients and season to taste

Method - Lamb

1. Heat olive oil in non stick pan until just smoking
2. Season racks and sear in pan 1 minute each side
3. Rub mustard evenly over rack and cook for 12 minutes in a 375 F oven or until internal temperature reaches 120 F
4. Let rest 5 minutes and slice into portions and serve over rice salad
